Honey, I'm home!

One friday night, not too long ago.....Nate came home from a long week at work. I was ready to completely crash, I was so exausted....

All of a sudden "Hey kids, lets go get a movie and make caramel corn!"

Huh? Caramel corn? Who's gonna make caramel corn? I sure don't have any idea how to make caramel corn....but it sure sounds like hard work....

So, I look online and find a few recipes....of course they all call for one ingredient I have never purchased in my entire life....corn syrup.

We load up the minivan, head to Coborn's....Nate and the kids go to find a movie and I look for our caramel corn ingredients. I try to take the easy way out...look in the microwave popcorn aisle and try to find microwave caramel corn....but then discover it has 4.5 grams of trans fat (TRANS FAT!) per serving. No thank you....I'll schlep over the stove to make my own.

We get home, and by then I've decided that making caramel corn is a heck of a lot better than watching Meet the Robinsons...have I ever mentioned how much I dislike children's movies?

I use this recipe for caramel corn...the only modificiations are that I followed some reader reviews and doubled the sauce recipe, and I used air popped versus pan cooked popcorn. Oh, and I baked it at 300 for only 20 minutes, rather than what the instructions said...to avoid burning it.

All in all, it took about 30 minutes from start to finish to make. It was WAY easier than I expected....the only thing I would do differently, is that if we are going to make this as a "snack" I wouldn't double the caramel sauce...it was way too sweet to just snack on.
Not that anyone complained.....
